Cheesy Freaking Potatoes

Hi friends.

In case you’ve been living under a rock, (or, you know, living in another country where they inexplicably don’t care about American football) this Sunday is the Super Bowl. So that means football, new commercials, half-time show featuring Beyoncé, and food.

I can’t believe that I’ve yet to share this recipe with you in the 2+ years I’ve been blogging.

This is one of my Grandma’s Recipes, and it’s awesome. My Grandma calls them “Hash Brown Baked Potatoes” but around here, and at church potlucks, we just call them “cheesy potatoes.” Continue reading

It’s Lefse Season!

Over the weekend, we went up to my in-laws for our annual lefse-making day. We all brought our giant batches of potato dough and set up 3 griddle stations for rolling & cooking them.

My sister came again this year, and my husband’s cousin Julie came for the first time. There were 8 of us total working on rolling, cooking and bagging them. There were so many of us that my in-laws traded out their dining room table for a ping-pong table.

It’s fun to have everyone together working around a big table. It’s become quite the annual tradition.

My Mom’s Pot Roast

Well, friends…

I’m going to let you in on a secret. Well, it’s not that much of a secret really.

My mom pretty much hates to cook. It’s not one of her gifts, really. She’s great at sewing and doing things with color and listening to your problems and a lot of other things, but would prefer to not have to cook anything ever.

That being said, she makes a good pot roast. And if my mom makes it, you know that it can’t be complicated. Continue reading

Pastys

Well, it may be spring, but here in Minnesota the weather has been rather capricious, vacillating mercilessly between winter and summer. The weekend was beautiful, but the new week was heralded by thunderstorms and cooler temperatures again. Looks like the entire week will be like this.

It’s the kind of weather that makes me want to eat oatmeal and drink hot chocolate and curl up with a good book.

And eat comfort food for dinner.

That’s where this recipe comes in.  It’s one of my grandma’s, but I don’t have a scanned version since she decided to throw away her recipe card for this one when we were cleaning out her old recipe box because she knows it by heart.

These are called “pastys,” pronounced like “past-eez,” not like the color my skin gets in the winter.

Shepherd’s Pie

So. I’ll admit I like to make fancy meals for people.  This is not one of those meals. This is simple and delicious and sooo not fancy.
